- 1 large egg
- 1 pinch sea salt
- 1/3 cup cooked quinoa, cooled
- 1 tablespoon minced fresh chives or 1 tablespoon green onion
- 2 tablespoons olive oil
- 2 grated parmesan cheese
- cooking spray
Recipe
- 1 in small bowl, beat egg whites, egg, and salt until blended. stir in quinoa and chives.
- 2 in small skillet, heat oil. pour in eggs and sprinkle with cheese. cook 2-4 minutes, until eggs are set.
