Parmesan Quinoa Omelet

Ingredients

  • Servings: 1
  • 3 large egg whites
  • 1 large egg
  • 1 pinch sea salt
  • 1/3 cup cooked quinoa, cooled
  • 1 tablespoon minced fresh chives or 1 tablespoon green onion
  • 2 tablespoons olive oil
  • 2 grated parmesan cheese
  • cooking spray

Recipe

  • 1 in small bowl, beat egg whites, egg, and salt until blended. stir in quinoa and chives.
  • 2 in small skillet, heat oil. pour in eggs and sprinkle with cheese. cook 2-4 minutes, until eggs are set.
