Mascarpone And Strawberries With Raspberry Wine Sauce

Ingredients

  • Servings: 4
  • 1 cup mascarpone cheese
  • 2 tablespoons sugar
  • 1 cup strawberry, quartered
  • 1 cup raspberries
  • mint leaf
  • 1 1/2 cups dry red wine
  • 300 g frozen raspberries, thawed, strained and pureed
  • 1/3 cup sugar
  • 1 teaspoon vanilla

Recipe

  • 1 in large saucepan over medium heat, stir together wine, raspberry purée and sugar; bring to boil.
  • 2 boil gently until reduced to ¾ cup.
  • 3 remove from heat; stir in vanilla.
  • 4 cover and refrigerate until chilled.
  • 5 in bowl, stir together mascarpone and sugar.
  • 6 layer mascarpone mixture, berries and sauce in stemmed glass dishes.
  • 7 garnish with mint leaves.
