Mascarpone And Strawberries With Raspberry Wine Sauce

Ingredients

- 1 cup mascarpone cheese
- 2 tablespoons sugar
- 1 cup strawberry, quartered
- 1 cup raspberries
- mint leaf
- 1 1/2 cups dry red wine
- 300 g frozen raspberries, thawed, strained and pureed
- 1/3 cup sugar
- 1 teaspoon vanilla
Recipe
- 1 in large saucepan over medium heat, stir together wine, raspberry purée and sugar; bring to boil.
- 2 boil gently until reduced to ¾ cup.
- 3 remove from heat; stir in vanilla.
- 4 cover and refrigerate until chilled.
- 5 in bowl, stir together mascarpone and sugar.
- 6 layer mascarpone mixture, berries and sauce in stemmed glass dishes.
- 7 garnish with mint leaves.
