Southwest Scramble Made Lite

Total Time: 12 mins Preparation Time: 5 mins Cook Time: 7 mins

Ingredients

  • Servings: 4
  • 2 light multi-grain english muffins
  • 1 cup egg substitute
  • 1/4 cup low-fat milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup 2% cheddar cheese, shredded (3 ounces)
  • 1/4 cup light sour cream
  • 1/4 cup chili lime salsa

Recipe

  • 1 toast the muffins.
  • 2 in a bowl, beat the egg substitute, milk, salt and pepper.
  • 3 spray with cooking spray a large nonstick frying pan, heat over medium-high heat.
  • 4 pour in the egg mixture.
  • 5 with a wooden spoon or spatula, push the eggs from one side of the pan to the other, lifting and folding eggs until they all form into clumps (about 2 to 2 1/2 min).
  • 6 remove from heat and stir in cheese until melted.
