  • 1/3 cup mexican blend cheese, shredded
  • 1 reduced-fat burrito-size flour tortilla
  • 1 teaspoon hot sauce
  • 1 tablespoon sour cream
  • 1 tablespoon bacon bits

Recipe

  • 1 one 1 tortilla spread refried beans, sprinkle cheese, bacon and add hot sauce.
  • 2 microwave for 1 minute or until cheese is melted.
  • 3 add sour cream, and wrap burrito style.
  • 4 serve immediately.

Super Easy Cheese Enchiladas

Ingredients

  • 2 lbs extra-sharp cheddar cheese, cut into twelve equal portions
  • 12 small corn tortillas
  • 1/4-1/2 cup vegetable oil
  • 1 onion, chopped
  • 1 (10 ounce) can enchilada sauce
  • 1 (14 ounce) can chili without beans

Recipe

  • 1 quickly cook tortillas in hot oil until softened. drain well on paper towels. set aside.
  • 2 saute onion in oil until limp. drain.
  • 3 place one stick of cheese and some onion onto each tortilla. roll up. place seam side down in lightly greased casserole.
  • 4 combine enchilada sauce and chili in a medium bowl. pour over tortillas.
  • 5 bake at 375 until done (20-40 minutes).

  • 1 (8 ounce) package spicy sausage
  • 1 (16 ounce) box velveeta macaroni shells and cheese
  • 1 (8 ounce) can rotel tomatoes
  • 1 zucchini

Recipe

  • 1 brown and strain the sausage.
  • 2 start the shells and cheese cooking as the box directs only use a cup more water.
  • 3 dice up the zucchini. i slice it thick with the skin on then quarter each slice.
  • 4 when the water starts to boil add the shells and zucchini.
  • 5 when the shells are tender drain the pot.
  • 6 open and drain the can of rotel.
  • 7 add all ingredients in to the pot adding the cheese package. ( i add a handful of my fav shredded cheese and 1/3 cup milk in addition to the packet.
  • 8 salt and pepper to taste :).

  • 1 garlic, chopped

  • 32 ounces lima beans, cooked and drained, reserve cooking liquid
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon chili powder
  • 1 tablespoon cornstarch, dissolved 1/4 cup cold water

Recipe

  • 1 preheat oven to 375*f.
  • 2 heat oil in large saucepan over medium-high heat. add onion, bell pepper and garlic; saute until soft.
  • 3 add olives and lima beans.
  • 4 stir in 1/2 cup cheese.
  • 5 add water to reserved cooking liquid to measure 1 1/4 cups; add to saucepan.
  • 6 place over high heat; bring to boiling.
  • 7 add chili powder, dissolved cornstarch, and to salt to taste; stir till starts to thicken.
  • 8 pour over beans; mix well.
  • 9 place in greased ovenproof casserole dish; cover with foil.
  • 10 bake 45 minutes.
  • 11 uncover, sprinkle with remaining cheese and bake until cheese melts.

Southwest Spaghetti Squash

Ingredients

  • 1 spaghetti squash (3 pounds)
  • 1 (14 ounce) can mexican-style tomatoes, undrained
  • 1 (14 ounce) can black beans, drained and rinsed
  • 3/4 cup monterey jack cheese, divided
  • 1/4 cup cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 preheat oven to 350°f.
  • 2 cut squash in half lengthwise.
  • 3 remove and discard seeds.
  • 4 place squash, cut side down, in greased baking pan.
  • 5 bake 45 minutes to 1 hour or until just tender.
  • 6 using fork, remove spaghetti-like strands from hot squash and place strands in large bowl.
  • 7 add tomatoes with juice, beans, 1/2 cup cheese, cilantro, cumin, garlic salt and pepper; toss well.
  • 8 spray 1 1/2 quart casserole with nonstick cooking spray.

Fresh Strawberry Frozen Yogurt

  • 1 1/3 cups fresh strawberries, cleaned with tops trimmed off
  • 2/3 cup sugar
  • 2 tablespoons vodka
  • 2 1/2 cups greek yogurt (approx 500g) or 2 1/2 cups plain yogurt, strained for 5 minutes with a cheesecloth
  • 1/2 teaspoon cream of tartar
  • 2 large egg whites, room temperature

  • 1 in the bowl of a food processor, puree strawberries, sugar and vodka until mixture is very smooth.
  • 2 in a large bowl, whisk berry mixture into greek yogurt (you may strain plain yogurt for about 5 minutes with a fine sieve or cheesecloth if you cannot find greek yogurt in your area to achieve a similar consistency).

  • 1 in a greased 9x13x2 baking dish, layer half of the tortilla strips on the bottom of the pan, then add half of the sausage, half of the onion, half of the salsa, and half of the cheese. repeat layers. then in a separate bowl, best eggs and add milk, and seasonings. pour over cheese. cover and refrigerate for four hours or overnight. remove from refrigerator 30 mins before baking. preheat oven to 350, and bake uncovered for 50 minutes. check with a knife inserted at center. let stand 10 minutes before cutting.   • 500 g mascarpone cheese
  • 3 tablespoons sugar or 3 tablespoons sugar substitute

  • 1 whip the egg whites into soft peaks with a pinch of salt.
  • 2 in another bowl whisk the egg yolks, sugar and vanilla for a few minutes, then add the mascarpone cheese.
  • 3 when the cheese and egg yolks are fully mixed together, add one table spoon of the egg whites and stir this in with a metal spoon.
  • 4 add the cheese mixture to the egg whites and stir in carefully, trying not to knock out the air from the beaten egg whites.
  • 5 then pour the mixture into a nice, freezer proof bowl and put into the freezer for 3 to 4 hours. the mixture shouldnâ??t be too hard, so donâ??t leave it in the freezer for longer than this â?? good excuse to eat it asap really! :).

Tofu Buffalo Wings

  • 12 ounces extra firm tofu
  • 1 tablespoon hot sauce (or to taste)
  • 1/2 cup barbecue sauce
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon paprika
  • 4 tablespoons olive oil

Recipe

  • 1 drain the tofu, and then remove excess moisture by cutting it in half lengthwise and microwaving on high, uncovered, for two minutes. gently squeeze out and wipe off excess moisture, then throw tofu in the freezer for one or two hours before removing to thaw in the fridge -- this will give the tofu a slightly heavier texture.
  • 2 cut tofu into bite-sized pieces and place in a lidded, flat-bottomed dish to marinade. combine hot sauce, barbecue sauce, black pepper, and garlic powder in a small bowl. pour half this mixture over the tofu; reserve the other half for later.
  • 3 let tofu sit in the refrigerator for at least 30 minutes. drain any excess marinade from tofu into reserved bowl of sauce. combine flour, salt, cayenne and paprika in a bowl. coat tofu with flour mixture.
  • 4 heat oil over medium-high heat in a large frying pan. fry tofu (in batches, if need be) until all sides are golden brown and oil has cooked out. add remaining sauce mixture to pan, stirring until tofu is well-coated. serve with ranch or bleu cheese dressing for dipping.

  • 4 tuna steaks
  • olive oil
  • salt & freshly ground black pepper
  • 80 g fresh rocket
  • 80 g fresh spinach leaves
  • 4 tomatoes, cut into wedges
  • 1 garlic clove, crushed
  • 1/2 cup shaved parmesan cheese (optional)
  • 2 red chilies, deseeded and chopped

  • 1 let cream cheese soften.
  • 2 spread some cream cheese on tortilla wrap.
  • 3 add a layer of salami.
  • 4 top with jalapeno pepper rings.
  • 5 tuck in sides of tortilla wrap and then roll lengthwise.
  • 6 wrap in cellophane wrap and let set for 1 hour or longer in the refrigerator.
  • 7 when ready to serve cut off ends and then slice.
  • 8 i have also made ahead of time and frozen them. i let them thaw out on the counter before serving.

  • 5 add asparagus. i used copped asparagus but you can also use baby asparagus, fresh sliced portabello or any mushroom, chopped spinach, broccoli, the list goes on.
  • 6 beat eggs in a bowl.
  • 7 add dry mustard and milk.
  • 8 mix well.
  • 9 season with salt and pepper.
  • 10 pour over layers in pan.
  • 11 sprinkle with paprika. i did mine on a diagonal and it looked really pretty!
  • 12 preheat oven to 350 degrees f.
  • 13 bake for 40-45 minutes.
  • 14 is amazing hot or cold.

Strawberry Angel Cake

  • 4 cups sliced strawberries
  • 3/4 cup sugar, divided
  • 2 tablespoons milk
  • 8 ounces cream cheese, softened
  • 1 (10 inch) round angel food cake
  • 3 tablespoons triple sec (orange-flavored liqueur) or 3 tablespoons orange juice, divided
  • 1 cup whipping cream, whipped very firm with 2 tbsp sugar
  • 2 tablespoons sliced almonds

Recipe

  • 1 combine strawberries and 1/4 cup sugar in a small bowl; cover and let stand 1 hour. combine 1/2 cup sugar, milk, and cream cheese in a medium bowl; beat at medium speed of mixer til smooth.

  • 1 (10 ounce) package frozen spinach

  • 1 cook spinach as directed on package.
  • 2 squeeze out as much water as possible.
  • 3 mix all ingredients together in an oven safe serving dish.
  • 4 bake at 350 for about 15 minutes. test to see if dip is hot in the center and cheese is melted.
  • 5 this can also me microwaved (3 minutes at a time until hot) or cooked in a small crock pot for about two hours.
  • 6 the crock pot is my preference as the dip stays hot while serving.
  • 7 serve with your choice of dippers.
  • 8 leftovers, if there are any, are great on a baked potato.

Parmesan Cheese Baskets Or Tuille Wafers.

Healthy Gourmet Quiche

  • 2 frozen pie crusts (made with vegetable oil not lard)
  • 6 eggs
  • 1/2 teaspoon sea salt or 1/2 teaspoon other salt
  • 3/4 cup 2% low-fat milk
  • 5 ounces frozen chopped spinach
  • 1 cup fresh broccoli
  • 6 stalks fresh asparagus (optional)
  • 1/2 large onion, minced
  • 1/2 cup low fat cottage cheese
  • 1/2 cup cheddar cheese (i use sharp cheddar)
  • aluminum foil

  • 1 preheat the oven to 350 degrees.
  • 2 cover just the edges of the pie crust (the lip) with aluminum foil to brevent over browning.
  • 3 crack eggs into a large mixing bowl and add the milk, blend with an electric mixer on low speed for 1 minute, or beat with a whisk or fork for several minutes until well blended and uniform (the more thoroughly you mix this, the more fluffy and light this dish will be).
  • 4 take the frozen chopped spinach and the fresh broccoli and cut them finely or run through food processor until minced and then put into the bowl with the egg mixture.
  • 5 thinly slice dime sized slices of the asparagus.
  • 6 add asparagus, minced onions, and salt into the mixture and stir well and pour half of the mixture into each pie crust.
  • 7 bake the quiches in the oven for 35-45 minutes until center is solid.
  • 8 melt the cheddar cheese, either on the stive over low heat, or in the microwave after slicing it up.
  • 9 pour half the melted cheddar on each quiche.
  • 10 return the quiche to the oven and cook another 5-15 minutes, until quiche is cooked through and the cheese is slightly brown, to well browned, depending on your preference. we prefer barely browned and slightly liquid.
  • 11 slice into 1/8ths for one serving.
  • 12 variations- try other cheeses like swiss (traditional), herbed cheeses, provelone for a smoky flavor, or even gouda or edam. other good ingredients to try may be bacon (we use vegetarian bacon, a few strips finely minced as it is a strong flavor), ham, etc.

Tuna Salsa Appetizer Pie

Recipe

  • 1 beat yogurt cheese and cool whip until fluffy.
  • 2 add powdered sugar and vanilla beat until light and fluffy.
  • 3 add starch and beat.
  • 4 pies seem to hold better if you use the starch.
  • 5 spoon into pie shells and top with fresh fruit.
  • 6 chill then garnish with powdered sugar and serve.

Mx5 Cheese Scones

  • 3 cups flour
  • 4 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 pinch cayenne pepper or 1 pinch curry powder

Recipe

  • 1 preheat oven to 215 degrees celsius.
  • 2 sift dry ingredients.
  • 3 add most of the cheese.
  • 4 mix to a light dough with the milk.
  • 5 do not mix it too much!
  • 6 turn out onto a floured board and gently knead.
  • 7 roll out and sprinkle remaining cheese on top.
  • 8 cut into individual scones.
  • 9 place on oven tray covered with baking paper.

Tofu Burritos!

Ingredients

  • 1/2 cup salsa
  • 1 (7/8 ounce) package taco seasoning

  • 4 -6 tortillas

Recipe

  • 1 heat skillet over med. heat.
  • 2 drain and rinse black beans and add to heated skillet.
  • 3 drain water from tofu and crumble into skillet with black beans.
  • 4 stir in salsa and taco seasoning.
  • 5 continue stirring and mashing until becomes a re fried bean consistency. when all mashed fold in shredded pepper jack cheese.
  • 6 warm tortillas in a hot dry pan just until golden brown.
  • 7 spread tofu and a teaspoon of sour cream on tortilla.
  • 8 if desired add lettuce, tomato, and olives.
  • 9 fold tortilla around filling and enjoy!

  • 1 heat oven to 350°f (325°f for dark or nonstick pans).
  • 2 place paper baking cup in each of 24 regular-size muffin cups.
  • 3 make and bake cake mix as directed on box for 24 cupcakes, substituting soda for the water and using oil and egg whites.

Parmesan Black Pepper Crisps

Southwest Grilled Tomatoes

  • 1 teaspoon winter savory or 1 teaspoon summer savory

  • 1 teaspoon rosemary
  • 2 teaspoons celery seeds
  • 1/4 cup soy sauce or 1/4 cup tamari
  • 3 cups pepperidge farm herb stuffing
  • 1/2 cup sesame oil, toasted
  • 1/4-1/3 cup soy sauce or 1/4-1/3 cup tamari
  • 2 tablespoons miso
  • 2 tablespoons orange juice
  • 1 teaspoon mustard (of choice)

  • 1 mash tofu or mix well with hands. be sure that all of the lumps are out.
  • 2 line a 12" colander with wet cheesecloth over lapping the sides. add the mashed tofu to the cloth covered colander, press down and cover with the overlapping sides. place the whole thing in a large bowl. cover the cheesecloth with a plate that fits inside the colander and place a 5 pound weight on the plate. refrigerate and let sit for 2 to 3 hours. when time is up, start the stuffing.
  • 3 saute' the onions, celery and mushrooms in the 2 tablespoons sesame oil.
  • 4 when soft, add the garlic and all the rest of the stuffing ingredients, except stuffing, mixing well. stir and cook for 5 minutes.
  • 5 add herb stuffing and mix well.
  • 6 remove tofu from refrigerator and take off weight, plate and top of cheesecloth. hollow out tofu to within 1 inch of the sides and bottom, placing the tofu in a bowl. place the stuffing inside the shell and pack in firmly. cover with the remaining tofu and pat down firmly. turn stuffed tofu onto a greased baking sheet, flat side down.
  • 7 gently press on sides of "turkey" to achieve a more oval shape. if desired at this point, you may mold "drumsticks" out of one pound of tofu, and place on each side of the "turkey".
  • 8 mix up the basting mixture and baste tofu "turkey" with half of it. cover the "turkey" with foil, and bake at 400 degrees for about 1 hour.
  • 9 remove foil, baste with all the remaining mixture except a few tablespoons and return to oven for 1 hour more, or until the "turkey" is golden.
  • 10 remove from oven and use rest of basting mix.
  • 11 using at least 2 large spatulas, move to a large plate. serve with the gravy of your choice, if you wish, and cranberry sauce.

  • 1 place 1/2 cup of the sugar and the mint leaves in a small pan with 1 cup of water and bring to a simmer, stirring occasionally to help dissolve the sugar.

  • 1 teaspoon salt

  • 1 combine allspice, cloves, red pepper flakes and mustard seeds in a piece of cheesecloth. tie securely with a length of kitchen string (to form a spice bag).
  • 2 bring a large saucepan of water to a boil; place tomatoes in the water and cook until the skins split, 1 to 2 minutes. then plunge them into a bowl of cold water to stop the cooking. pat the tomatoes dry, peel them, cut into 1/4-inch pieces.
  • 3 place the tomatoes and all the remaining ingredients in a heavy saucepan. add the spice bag and slowly bring the mixture to a boil. then reduce the heat and simmer for 30 minutes, stirring frequently.
  • 4 note: if using regular tomatoes you may need to simmer additional time and/or thicken somewhat with 1 to 2 teaspoons cornstarch.
  • 5 remove the pan from the heat and discard the spice bag. let the jam cool, refrigerate. makes 1-1/4 cups.

  • 1 heat a nonstick saute pan, big enough to fit tortillas, over medium-low heat. add oil. add eggs, breaking yolks. (add salt and/or pepper to taste.).
  • 2 cook until eggs are set enough to flip, about 2 minutes. flip; cook until eggs are done, about 2 more minutes. transfer to a plate and wipe out pan.
  • 3 return pan to heat and increase heat to medium. place one tortilla in pan. sprinkle on half the cheese.
  • 4 place cooked eggs over cheese. top with remaining cheese and tortilla.
  • 5 cook until bottom tortilla is a little brown and cheese starts to melt, about 1 to 2 minutes.
  • 6 flip with a spatula and brown the other side. remove from pan. transfer to cutting board to cool one minute. then slice into wedges.

Tuna Stuffed Crescent Roll Casserole

Ingredients

  • 2 (6 ounce) cans tuna in water, drained well
  • 1 small onion, diced
  • 1 cup shredded cheese (your choice)
  • 1 cup frozen vegetables, thawed and drained
  • 2 eggs
  • 8 ounces crescent rolls

Recipe

  • 1 mix all ingredients except crescent sheets. spray non-stick spray into a line 8x8 baking pan with one crescent roll sheet. layer tuna mixture onto the first sheet of crescent roll sheet. top with second crescent sheet, you can press the sheet together so it will look like one continuous sheet. bake at 350 degrees until golden brown, about 25 minutes. top this with a cheese sauce or grated parmesan cheese.

Red's Hot Pretzel Dip

Ingredients

  • 1/4 cup colman dry mustard (no substitution)
  • 1/4 cup sugar
  • 2 tablespoons vinegar
  • 1 tablespoon water
  • 1 egg yolk
  • 1 (8 ounce) package cream cheese

Recipe

  • 1 mix all ingredients with a mixer until well blended.
  • 2 serve with favorite pretzels.
  • 3 use warm or cold.
