Mexican Quiche

Total Time: 1 hr 15 mins Preparation Time: 20 mins Cook Time: 55 mins

Ingredients

  • 1 frozen pie crust, i use organic whole wheat
  • 5 large eggs
  • 1 cup half-and-half
  • 1 cup shredded monterey jack cheese
  • 1/2 cup shredded mexican blend cheese
  • 1 (4 ounce) can of chopped green chilies
  • 1/2 cup diced cooked ham
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper
  • 1 pinch of ancho chili pepper

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 in a bowl, add 5 eggs, half and half and mix well.
  • 3 blend in green chiles, cheeses and ham, incorporate well.
  • 4 add salt, black pepper and ancho chile pepper.
  • 5 stir well and pour into piecrust.
  • 6 cover piecrust with foil and bake 40 minutes and take off foil and bake an additional 15 minutes til center is done.
  • 7 serve individually with dollop of sour cream if you like and sprig of cilantro for presentation.
