Onion Parmesan Dip

  • 1 cup mayonnaise
  • 2 large yellow onions, minced
  • 1 cup freshly grated parmesan cheese
  • 2 teaspoons hot sauce
  • 2 teaspoons worcestershire sauce

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 in a large bowl, blend the cream cheese with the mayonnaise until smooth.
  • 3 stir in the remaining ingredients and spread the mixture into a shallow 1-quart oven-safe casserole dish.
  • 4 bake in oven for 15 minutes, until bubbling.
  • 5 serve immedeately.

Smoked Salmon Ball

Recipe

  • 1 combine salmon, cream cheese, chopped onion and dill.
  • 2 shape into ball, wrap in plastic, and refrigerate at least 2 hours.
  • 3 to serve: cover serving tray with onion rings and sprinkle over capers. place salmon ball on onion bed and capers. garnish with dill and lemon wedge. serve with toasts.

Thunder Cheese Appetizer

  • 1 cup walnuts, toasted and broken into pieces
  • 1 cup low-fat mayonnaise
  • 1 cup sharp cheddar cheese, finely shredded
  • 1 cup monterey jack cheese, finely shredded
  • 3 green onions, thinly sliced
  • 1 dash red pepper flakes
  • 1/4 cup pepper jelly

Recipe

  • 1 mix all ingredients, except pepper jelly, in a medium bowl until well combined.
  • 2 line a pie plate with wax paper. spread mixture into pie plate, cover with another sheet of wax paper, and pat down until flat and evenly distributed.
  • 3 refrigerate overnight, or for several hours.
  • 4 remove top layer of wax paper, invert on serving platter or plate, then remove remaining layer of wax paper.
  • 5 spread pepper jelly over top. serve with wheat thins or other crackers.

Spinach Casserole

  • 1 blend first five ingredients in food processor until smooth.
  • 2 spoon into serving bowl.
  • 3 sprinkle chopped pistachios on top.
  • 4 chill in refrigerator.

Three-cheese Grits

Ingredients

  • Servings: 6
  • 4 cups water
  • 1 cup quick-cooking grits
  • 2 ounces sharp cheddar cheese
  • 2 ounces monterey jack cheese
  • 1 (8 ounce) package cream cheese
  • 1/2 teaspoon salt

Recipe

  • 1 combine the water and grits in a stockpot.
  • 2 cook over medium heat for 20 minutes, stirring every few minutes.
  • 3 make sure to scrape the bottom of the pan with the spoon each time.
  • 4 while the grits are cooking, grate the cheddar and monterey jack cheeses.
  • 5 when the grits are done, stir in the cream cheese, grated cheeses, and salt.

  • 8 eggs
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded bel paese cheese
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon chopped fresh chives
  • 1/8 teaspoon ground pepper
  • 1 tablespoon vegetable oil

Recipe

  • 1 beat eggs and cream in large bowl until frothy. stir in half the cheeses, 1 t. chives, and the pepper.
  • 2 heat broiler.
  • 3 heat oil in 10- to 12-inch ovenproof heavy skillet over medium heat until drop of egg sizzles on contact. pour egg mixture into skillet. cook covered over medium heat, without stirring, until edge is set but surface is still wet, 10-12 minutes.
  • 4 sprnkle remaining cheeses evenly over frittata. broil 6 inches from heat until cheese is melted and edge is lightly puffed, about 2 minutes. sprinkle with 1 t. chives. serve hot.

Holiday Tofu Loaf

Ingredients

  • 3 lbs extra firm tofu
  • 1/4 cup vegetable oil
  • 1/4 cup orange juice
  • 3 tablespoons whole grain dijon mustard
  • 2 teaspoons low sodium soy sauce
  • 1 teaspoon miso (optional)
  • 1 teaspoon thai chili paste (optional) or 1 teaspoon dried chili pepper flakes (optional)
  • 3 teaspoons dried rosemary
  • 3 teaspoons dried savory
  • 3 teaspoons dried sage
  • 1 teaspoon vegetable bouillon granules
  • 3 tablespoons maple syrup or 3 tablespoons agave nectar
  • prepared stuffing, of your choice

Recipe

  • 1 drain off excess water from tofu. in a food processor or with a potato masher, crumble tofu avoiding any large lumps. add the vegetable bullion along with 1 tsp each of the sage, rosemary and savory and 1 tbsp of the maple syrup, mix well.
  • 2 line a medium sized colander with cheese cloth, fill with tofu mixture. cover the tofu mixture with a plate topped with a five lb weight (generally a few good sized tomato cans will do the trick). leave tofu to press for at least three hours in the fridge.
  • 3 in the mean time, prepare your stuffing.
  • 4 preheat oven to 375 degrees.
  • 5 combine remaining ingredients (except for the stuffing) in a bowl, whisk together and set aside. after three hours remove the plate and weight from the tofu. using a spoon, hollow out the tofu leaving a one inch shell. fill shell with stuffing (don't overfill! the stuffing should only be inside the shell, not spilling over onto the sides) and cover with the extracted tofu. pack the tofu layer down, then turn colander right-side up onto a deep baking sheet.
  • 6 cover tofu loaf with half of the sauce mixture, being sure to spread the mustard grains evenly over the surface. bake until golden brown (about 1 hour 15 min), basting with remaining mixture after the first 45 minutes.

Spinach Cashew Salad

Ingredients

  • Servings: 8
  • 1/2 lb bacon
  • 1/2 cup cashews, pieces
  • 5 ounces spinach
  • 1/2 head lettuce, about 8 ounces bagged
  • 1/2 cup mozzarella cheese, grated
  • 2/3 cup oil
  • 1/3 cup sugar
  • 1/3 cup red wine vinegar
  • 1/4 teaspoon dry mustard
  • 1 1/2 teaspoons red onions, finely grated
  • 1 tablespoon poppy seed

Recipe

  • 1 chop bacon and fry until crisp.
  • 2 drain on paper towel to remove as much excess fat as possible. wash spinach and lettuce then tear leaves into bite size pieces.
  • 3 place in salad bowl.
  • 4 add cashew pieces, grated cheese, and crumbled bacon.
  • 5 toss when ready to serve. serve with poppy seed dressing.
  • 6 note: fat grams may be reduced to 1 gram per serving if bacon and cashews are eliminated.
  • 7 each add approximately 3 grams of fat per serving.
  • 8 poppy seed dressing: place all ingredients in blender and blend until smooth.
  • 9 alternate method: finely grate onion, add remaining ingredients and beat with mixer until well blended.

Spinach And Strawberry Salad

Ingredients

  • 1 lb baby spinach leaves (trimmed)
  • 2 lbs fresh strawberries (sliced)
  • 2 cups pecans (chopped)
  • 1 cup feta cheese (crumbled)
  • 1/2 red onion (sliced)
  • 1 cup raspberry vinaigrette dressing (store bought is fine)

Recipe

  • 1 wash and trim the spinach leaves. (i like to remove the stems).
  • 2 wash and remove the tops of the strawberries. slice lengthwise into about 1/8 inch slices so that the slices look like "hearts".
  • 3 thinly slice the red onion so that you have "round shavings".
  • 4 toss the spinach leaves, 1/2 the strawberry slices, 1/2 the pecans and 1/4 cup of feta with 1/2 of the salad dressing.
  • 5 arrange in a bowl or on a serving dish.
  • 6 on top, layer the remaining strawberry slices and onions.
  • 7 drizzle with a little more dressing.
  • 8 sprinkle the remaining pecans and feta on the salad and drizzle with a bit more dressing for color.
  • 9 garnish with several whole strawberries (i like to slice partway through the whole berry, leaving the green leaves, and "fan" the slice out to make an attractive garnish).
  • 10 serve immediately. note: this salad will not keep long. the vinegar in the dressing will wilt the leaves and "melt" the cheese after a few hours).

Low-fat But Still Delicious Breakfast Burrito

  • 2 slices turkey bacon
  • 1/3 cup egg beaters egg substitute
  • 1 low-fat tortilla
  • fat free cheese
  • fresh black pepper
  • salt

Recipe

  • 1 cook bacon and eggs according to package directions, add salt and black pepper to your eggs if desired.
  • 2 layer the bacon and eggs on top of your tortilla
  • 3 sprinkle desired amount of cheese over bacon and eggs.
  • 4 roll your burrito up and cook on high in the microwave approximately 15 seconds to warm the tortilla and melt the cheese.
  • 5 enjoy your burrito!

Spinach Carrot Cake

  • 200 g butter (room temperature)
  • 4 eggs
  • 250 g self-rising flour
  • 100 g cheese, grated (old)
  • 400 g carrots
  • 250 g spinach (frozen)

Recipe

  • 1 preheat oven at 175 c.
  • 2 grease short sides cake form with butter, use baking paper to cover the long sides.
  • 3 use mixer to mix eggs with butter.
  • 4 add self-rising flour and mix.
  • 5 add cheese, season with salt and pepper to your likening.
  • 6 divide dough in two parts.
  • 7 grate carrot and mix with one part.
  • 8 push water out of spinach and mix with other part.
  • 9 put carrot dough in baking stuff and then spinach dough.
  • 10 bake for 1 hour and leave to rest for 10 minutes.
  • 11 lift out of caking form and cut into pieces.

Savory Oatmeal With Soft-cooked Egg, Turkey Bacon & Parmesan

  • 1/2 cup quaker quick oats or 1/2 cup old fashioned oats
  • 1 whole egg
  • 2 slices turkey bacon, strips

  • 1 prepare oatmeal as usual and set aside. coat a small nonstick pan with cooking spray and turn on medium heat. add bacon, cook until browned, and then remove. in the same pan, cook egg until the is set and the yolk is still runny (about 3-4 minutes). top oatmeal with the egg, bacon, parmesan cheese, scallions, fried onions, and salt & pepper.

Spinach Artichoke Burritos

  • 2 (10 ounce) packages frozen spinach
  • 8 ounces low-fat cream cheese
  • 1/4 cup parmesan cheese, grated
  • 1 (14 ounce) can artichoke hearts, drained and quartered
  • 1/3 cup light mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 flour tortillas

Recipe

  • 1 defrost spinach by cooking in microwave on high for 6 minutes.
  • 2 drain spinach then wrap in a kitchen towel and squeeze out as much water as possible.
  • 3 place the spinach in bowl along with the rest of the ingredients.
  • 4 mix well.
  • 5 place roughly 1/3 cup in each tortilla (depends on size, i think i used 6 inch) and roll up.
  • 6 place in glass baking dish and bake, covered til heated through or microwave til hot.
  • 7 to freeze, wrap each individually in foil then place with others in freezer bag.

Spinach Cabrini

  • 1/4 cup diced onion
  • 1 dash oregano (approx. 1/8 tsp)

Recipe

  • 1 mix together all ingredients.
  • 2 spread in greased 9x13 pan.
  • 3 bake at 350 for 45 minutes.

Light Pineapple Mousse

Ingredients

  • Servings: 4
  • 200 g canned pineapple chunks, canned in natural juice
  • 1/2 cup reserved pineapple juice, from the canned pineapple
  • 1/2 cup water
  • 1 (11 g) packet sugar-free pineapple jelly crystals (jello crystals)
  • 1/2 cup evaporated low-fat milk
  • 1/2 cup light cream cheese

Recipe

  • 1 refrigerate the evaporated milk to make it as cold as possible.
  • 2 combine the juice, water and jelly crystals. microwave for one minute, stir and leave to cool.
  • 3 pour the evaporated milk into a small mixing bowl and beat until very thick. add the cream cheese and continu beating.
  • 4 gradually add the jelly and continue to beat until the mixture is very thick.
  • 5 fold in the pineapple pieces.
  • 6 place the mousse into 4 individual serving dishes and refrigerate for about an 1 1/2 or until set.

Savory Muffins With Goat Cheese, Rosemary And Kalamata Olives

Spinach Apple Sauté

  • 1 tablespoon vegetable oil
  • 1/3 cup raisins
  • 1 garlic clove, minced
  • 1/2 cup pine nuts (or pumpkin seeds, or raw cashews)
  • 2 gala apples, cored and chopped
  • 1/3 cup italian sausage, cooked
  • 6 ounces fresh baby spinach
  • 1 teaspoon parmesan cheese

Recipe

  • 1 heat oil over medium heat. sauté raisins, garlic and nuts until garlic is cooked but not browned.
  • 2 add apple and sauté until softened, about 5 minutes. add sausage to reheat. add spinach and cook until wilted. sprinkle with cheese for serving.

Spinach Artichoke And Mushroom Alfredo Pizza

Ingredients

  • 12 inches pizza crusts (storebought or homemade)
  • 3/4 cup alfredo sauce, whatever kind you like
  • 2 -3 cups spinach, chopped in a food processor
  • 3 -4 tablespoons freshly grated parmesan cheese
  • 1/2 cup chopped mixed mushrooms (i used whites and creminis)
  • 1/2 cup artichoke, pieces
  • 1/2 cup mozzarella cheese, shredded
  • 1 -2 tablespoon chopped fresh oregano (or a sprinkling of dried)

Recipe

  • 1 spread alfredo sauce all over the pizza crust evenly to your liking.
  • 2 run a bunch of spinach through a food processor to get a nice chopped consistency, about 2-3 cups worth, until you have enough to layer all the spinach over the alfredo sauce completely covering the pizza.
  • 3 sprinkle a small amount of fresh parmesan cheese over the spinach layer.
  • 4 top with artichokes and mushrooms all over.
  • 5 sprinkle mozzarella cheese all over the mushrooms and artichokes.
  • 6 top with fresh or dried oregano all over the entire pizza.
  • 7 bake at 375f for 10-15 minutes or until the cheese has lightly browned.

Three-cheese Broccolini Turnovers

Total Time: 1 hr 10 mins Preparation Time: 45 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 bunches broccolini, finely chopped
  • 1 tablespoon extra virgin olive oil, plus more for brushing
  • 1 large onion, finely chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • salt
  • pepper
  • 1/2 lb unsalted mozzarella cheese, cut into small cubes
  • 16 sheets frozen phyllo dough, thawed
  • 1 cup store-bought marinara sauce, warmed

Recipe

  • 1 bring a medium saucepan of salted water to a boil.
  • 2 add the broccolini and cook until crisp-tender, about 3 minutes.
  • 3 drain and rinse with cold water; set aside.
  • 4 preheat the oven to 400°.
  • 5 line a baking sheet with parchment paper and set aside.
  • 6 in a medium skillet, heat 1 tablespoon olive oil over medium high heat.
  • 7 add the onion and cook, stirring, until softened, about 5 minutes.
  • 8 transfer to a bowl and let cool.
  • 9 stir in the ricotta, parmesan, egg, 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • 10 fold in the broccolini and mozzarella.
  • 11 lay 1 phyllo sheet on a work surface and brush with olive oil.

  • 13 halve the phyllo stack lengthwise.
  • 14 spoon 3/4 cup broccolini mixture onto 1 stack, near a short end.
  • 15 fold the right corner diagonally over the filling to make a triangle; continue folding diagonally until you reach the other end.
  • 16 place the turnover on the baking sheet and brush with olive oil.
  • 17 repeat with the remaining phyllo and filling to make 8 turnovers.
  • 18 bake the turnovers until golden and crisp, 20 to 25 minutes.
  • 19 serve with the marinara sauce.

Spaghetti Tacos

Ingredients

  • Servings: 4
  • 8 ounces about half a regular package spaghetti noodles
  • 8 ounces spaghetti sauce (we've used both 8 oz and 1 lb 10 oz jars...either works)
  • 1 lb hamburger
  • mozzarella cheese
  • hard taco shell

Recipe

  • 1 brown hamburger, dump out grease. add spaghetti sauce.
  • 2 take approx half package of spaghetti noodles. break noodles into fourths. boil noodles in pot.
  • 3 brown taco shells in oven.
  • 4 and enjoy!

Laundry Soap Inexpensive

Ingredients

  • 1/2 cup washing soda
  • 1/2 cup borax
  • 2 ounces fels-naptha bath soap (or zote)
  • 1 teaspoon essential oil, of you choice
  • 4 cups water
  • 1 gallon water
  • 3 quarts water

Recipe

  • 1 grate soap in food processor or use a cheese grater.
  • 2 melt soap in 4 cups of water on the stove on medium heat.do not boil.
  • 3 add borax and washing soda.
  • 4 stir until dissolved.
  • 5 add fragrance.
  • 6 pour mixture into a 3-5 gallon bucket or big anamel pot and add the rest of the water. stir.
  • 7 let it set overnight and it will gel.
  • 8 pour into empty detergent bottles or store in covered bucket.
  • 9 shake or stir before using. use 1/4 cup per normal load of laundry. use 1/2-1 cup for mens work clothes or socks.
  • 10 once you have the ingredients, one box of borax will make about 38 gallons of laundry soap, each bar of zote will make 14 gallons, and a 4 lb bottle of sodium carbonate makes 32 gallons. it cost me $14.72 to begin with [including 5 bars of zote]. because of the amount that each ingredient is sold in, i can make atleast 32 gallons of laundry soap which means 2048 loads of laundry for $14.72. thats about 4 years worth for my family of 5 people.

Tropical Fruit Chiffon Pie

Ingredients

  • 1 refrigerated pie crust, softened as directed on box
  • 1 (8 ounce) can crushed pineapple
  • 1 (3 ounce) box lemon gelatin
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup sugar
  • 1 (11 ounce) can mandarin orange segments, drained and divided
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon coconut extract
  • 1 1/2 cups whipping cream
  • 2 tablespoons sugar
  • whipped cream (optional garnishment)
  • remaining mandarin orange segments (optional garnishment)
  • mint leaf (optional garnishment)

Recipe

  • 1 heat oven to 450°f
  • 2 place pie crust in bottom of ungreased 9-inch glass pie plate. prick bottom and side with fork. bake 10 to 12 minutes or until light brown. cool before filling.
  • 3 drain pineapple, reserving syrup. add water to pineapple syrup to measure 1 cup of liquid. heat to boiling; remove from heat. stir in gelatin until dissolved. set aside.
  • 4 in large bowl combine softened cream cheese and 3/4 cup sugar with electric mixer. add pineapple and 1/2 cup of the mandarin orange segments. beat with mixer until creamy. while beating, add gelatin mixture, lemon juice and coconut extract. chill until mixture is thick but not firm, about 1 hour.
  • 5 beat 1 1/2 cups whipping cream until stiff. add 2 tablespoons sugar to cream while beating. reserve 1 cup whipped cream for top of pie. add remainder of whipped cream to chilled gelatin mixture and mix at low speed. chill about 15 minutes or until mixture is firm enough to mound. heap into crust. chill until firm, at least 3 hours.
  • 6 garnish, if desired, with reserved 1 cup whipped cream, remaining mandarin orange segments and mint leaves. store in refrigerator.

  • 1 1. put a large skillet on the stove at medium heat.
  • 2 2. shred about 1/3 (or a bit more if you wish) into a bowl.
  • 3 3. add 2 tbs of your favorite salsa (i use my own homemade).
  • 4 4. with a fork, mix the salsa in with the cheese (it's okay if you smush the cheese a little bit).

Swedish Cheese Pie

  • 1 egg
  • 5 egg whites

Recipe

  • 1 melt butter in skillet and sauté the garlic and onion until the onion is translucent; cool.
  • 2 beat the egg and egg whites and divide into 2 equal portions.
  • 3 heat oven to 350°f and spray veggie oil into a 1-quart loaf pan.
  • 4 place parchment paper on the bottom of the pan, oiled (you can also use wax paper).
  • 5 purée the carrots with half of the onions, garlic, egg mixture parmesan and season with salt and pepper. purée until smooth and pour into the prepared loaf pan.
  • 6 purée the spinach with the remaining ingredients (half of the onions, garlic, egg and parmesan etc).
  • 7 smooth the top of the loaf and place the loaf in a 9x13-inch ovenproof dish. pour boiling water into the dish bringing the water level to about half way up the side of the loaf pan.

  • 9 remove from oven and let the loaf rest in the water bath for 20 minutes before unmolding.

Strawberry Ricotta Hotcakes

  • 300 g feta cheese
  • 1 tablespoon red chili pepper, finely chopped

  • 1 cut the tomatoes into 1cm slices.
  • 2 put 1 tbsp olive oil in the ceramic bowl or bowls and place a layer of tomatoes on top of the oil.

  • 3 cups baby spinach
  • 1 lb asparagus, chopped into 1 inch pieces
  • 3 tablespoons parmesan cheese, grated

  • 1 medium onion, chopped

Recipe

  • 1 whisk eggs and add in salt and pepper to taste; set aside. heat olive oil on medium heat in an oven proof pan. add in onion and cook for 5 minutes. add in asparagus and cook for additional 5 minutes. add spinach and saute until wilted. add eggs and stir around until they pull away from the sides of the pan. place pan in oven to broil on low until the eggs are set. plate immediately and add additional grated parmesan if desired.
