spinach au gratin

Ingredients

  • Servings: 8
  • 4 (10 ounce) bags fresh spinach
  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons olive oil
  • 3 leeks, thinly sliced- part only
  • 1 shallot, chopped
  • 3 cloves garlic, chopped
  • 1 cup heavy cream
  • 4 large eggs
  • 1 cup ricotta cheese
  • 1/2 cup grated swiss cheese
  • 1/4 cup grated parmesan cheese
  • salt, pepper

Recipe

  • 1 preheat oven to 350.
  • 2 in a large non stick skillet, saute spinach in batches until wilted, remove to strainer and squeeze dry.
  • 3 melt butter and oil in a skillet.
  • 4 add leeks, shallot, garlic, cook until soft 5 minutes.
  • 5 remove from heat.
  • 6 in a large bowl whisk eggs and cream.
  • 7 whisk in cheeses, salt pepper, spinach and leek mixture.
  • 8 pour into a greased 13x9x2 baking dish.
  • 9 bake aprox 50-60 minutes until a knife inserted into center comes out clean.
