Pumpkin Dumplings

Ingredients

- 1/2 cup canned solid-pack pumpkin
- 1 large egg
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground nutmeg
- 1/8 teaspoon baking powder
- 1/2 cup flour
- 3 tablespoons butter
- 1/2 cup parmesan cheese
Recipe
- 1 bring a large pot of salted water to a boil.
- 2 in a large bowl, combine the pumpkin, egg, salt, nutmeg, and baking powder.
- 3 blend well.
- 4 add flour.
- 5 the dough should be soft.
- 6 dip a 1/2 teaspoon measure into the boiling water.
- 7 scoop up a generous 1/2 teaspoon of the dough.
- 8 drop dough into boiling water.

- 10 be sure to always dip the 1/2 teaspoon measure into the boiling water before scooping up the dough.
- 11 boil dumplings about 10 minutes.
- 12 transfer to a colander with a slotted spoon to drain.
- 13 in a large skillet, melt the 3 tablespoons butter over medium heat.
- 14 add the dumplings and saute until beginning to brown, about 8 minutes.
- 15 transfer to a serving dish and sprinkle with the parmesan.
- 16 serve.
