Spinach Apple Sauté

Ingredients

- 1 tablespoon vegetable oil
- 1/3 cup raisins
- 1 garlic clove, minced
- 1/2 cup pine nuts (or pumpkin seeds, or raw cashews)
- 2 gala apples, cored and chopped
- 1/3 cup italian sausage, cooked
- 6 ounces fresh baby spinach
- 1 teaspoon parmesan cheese
Recipe
- 1 heat oil over medium heat. sauté raisins, garlic and nuts until garlic is cooked but not browned.
- 2 add apple and sauté until softened, about 5 minutes. add sausage to reheat. add spinach and cook until wilted. sprinkle with cheese for serving.
