Strawberry Ribbon Pie

Ingredients

- 1 (9 inch) pie shells, prebaked
- 1 (3 ounce) package strawberry gelatin
- 1/4 cup sugar
- 1 1/4 cups boiling water
- 10 ounces frozen strawberries
- 1 tablespoon lemon juice
- 3 ounces cream cheese
- 1/3 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 cup heavy cream
Recipe
- 1 in a small saucepan combine strawberry gelatin, sugar and boiling water.
- 2 add strawberries and lemon juice, mix well.
- 3 refrigerate.
- 4 stir every half hour until mixture mounds.
- 5 then whip the cream cheese in a seperate bowl with the confectioner's sugar , vanilla and salt.
- 6 in a third bowl whip the heavy cream to soft peak stage. fold the whipped cream cheese mixture into the whipped cream.
- 7 pour this mixture into the pie shell.
- 8 pour the strawberry mixture over that, refrigerate until ready to serve.
