Strawberry Ribbon Pie

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 (9 inch) pie shells, prebaked
  • 1 (3 ounce) package strawberry gelatin
  • 1/4 cup sugar
  • 1 1/4 cups boiling water
  • 10 ounces frozen strawberries
  • 1 tablespoon lemon juice
  • 3 ounces cream cheese
  • 1/3 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 cup heavy cream

Recipe

  • 1 in a small saucepan combine strawberry gelatin, sugar and boiling water.
  • 2 add strawberries and lemon juice, mix well.
  • 3 refrigerate.
  • 4 stir every half hour until mixture mounds.
  • 5 then whip the cream cheese in a seperate bowl with the confectioner's sugar , vanilla and salt.
  • 6 in a third bowl whip the heavy cream to soft peak stage. fold the whipped cream cheese mixture into the whipped cream.
  • 7 pour this mixture into the pie shell.
  • 8 pour the strawberry mixture over that, refrigerate until ready to serve.
