Tuna Salad With Chilli Basil Pesto

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 4 tuna steaks
  • olive oil
  • salt & freshly ground black pepper
  • 80 g fresh rocket
  • 80 g fresh spinach leaves
  • 4 tomatoes, cut into wedges
  • 1 garlic clove, crushed
  • 1/2 cup shaved parmesan cheese (optional)
  • 2 red chilies, deseeded and chopped
  • 1/3 cup pine nuts
  • 1 1/2 cups fresh basil
  • 1/2 cup olive oil
  • salt and pepper

Recipe

  • 1 to make pesto:.
  • 2 place chilli, garlic, parmesan, pine nuts and basil in processor, process until combined.
  • 3 slowly add olive oil until pureed.
