Tuna Salad With Chilli Basil Pesto

Ingredients

- 4 tuna steaks
- olive oil
- salt & freshly ground black pepper
- 80 g fresh rocket
- 80 g fresh spinach leaves
- 4 tomatoes, cut into wedges
- 1 garlic clove, crushed
- 1/2 cup shaved parmesan cheese (optional)
- 2 red chilies, deseeded and chopped
- 1/3 cup pine nuts
- 1 1/2 cups fresh basil
- 1/2 cup olive oil
- salt and pepper
Recipe
- 1 to make pesto:.
- 2 place chilli, garlic, parmesan, pine nuts and basil in processor, process until combined.
- 3 slowly add olive oil until pureed.
- 4 transfer to bowl and season. set aside.
- 5 to cook tuna:.
- 6 brush with oil and season.
- 7 grill to you liking.
- 8 cut tuna into chunks, add to other salad ingredients, season and top with pesto.
- 9 serve immediately.
