Tuscan Cranberry Almond Salad

Ingredients

- 10 cups spring greens or 10 cups mesclun
- 1 cup chopped carrot
- 1/2 red onion, thinly sliced
- 1/2 cup slivered almonds
- 1/2 cup bacon bits
- 1 cup dried cranberries
- 1 medium granny smith apple, cored and chopped
- 1/2-1 cup crumbled feta or 1/2-1 cup shredded cheddar cheese
- 1 (2/3 ounce) package italian salad dressing mix
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 3 tablespoons water
Recipe
- 1 place salad greens in a large bowl.
- 2 add carrots, onion, almonds, bacon bits, dried cranberries and apple.
- 3 sprinkle with cheese.
- 4 prepare dressing according to package instructions, using balsamic vinegar, olive oil and water.
- 5 toss before serving and pass the salad dressing at the table.
