Tuscan Cranberry Almond Salad

Ingredients

  • Servings: 10
  • 10 cups spring greens or 10 cups mesclun
  • 1 cup chopped carrot
  • 1/2 red onion, thinly sliced
  • 1/2 cup slivered almonds
  • 1/2 cup bacon bits
  • 1 cup dried cranberries
  • 1 medium granny smith apple, cored and chopped
  • 1/2-1 cup crumbled feta or 1/2-1 cup shredded cheddar cheese
  • 1 (2/3 ounce) package italian salad dressing mix
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons water

Recipe

  • 1 place salad greens in a large bowl.
  • 2 add carrots, onion, almonds, bacon bits, dried cranberries and apple.
  • 3 sprinkle with cheese.
  • 4 prepare dressing according to package instructions, using balsamic vinegar, olive oil and water.
  • 5 toss before serving and pass the salad dressing at the table.
