Spinach Dip (lighter Version)

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 10 ounces chopped spinach, thawed & drained
  • 1 1/2 teaspoons garlic, minced
  • 1/2 teaspoon olive oil
  • 6 ounces 2% shredded italian cheese blend
  • 1/2 cup light mayonnaise
  • 1/3 cup light sour cream
  • 2 -3 ounces milk
  • lemon juice, dash
  • 1/2 teaspoon onion powder
  • 1 tablespoon crushed red pepper flakes

Recipe

  • 1 in med. saucepan over low heat, add olive oil and minced garlic; saute 1 minute. add milk and cheese, stir constantly until melted & well blended. remove from heat; stir in mayo & sour cream. fold in spinach. return to low heat, add lemon juice & spices. stir to blend well. transfer to an ovenproof dish sprayed with nonstick spray. top with more shredded cheese if desired. bake at 325 for 15-20 minutes or until bubbly.
