Stupidly Simple Coconut Cream Pie

Ingredients

  • 8 ounces cream cheese, softened
  • 12 ounces cool whip
  • 1 teaspoon coconut extract
  • 7 ounces coconut flakes
  • 8 inches prepared graham cracker crusts

Recipe

  • 1 in a mixing bowl, beat cream cheese and cool whip until thoroughly combined. add coconut extract and coconut. mound into pie shell and refrigerate for at least 4 hours.
  • 2 for a decorative touch, sprinkle with toasted coconut.
  • 3 for a more tropical taste, put a layer of lemon or lime curd in the crust before adding the coconut mixture.
