Tomato Salad Served With Cottage Cheese

Ingredients

- 4 -5 medium ripe tomatoes
- 3 green onions, and green parts
- 1/4 cup cilantro, chopped
- 1 tablespoon fresh basil or 1 tablespoon freeze- dried basil
- 1 tablespoon oil (olive or grapeseed)
- 1 1/2 teaspoons balsamic vinegar
- 1/4 teaspoon garlic powder (i find fresh garlic a little too strong in this mix)
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon kosher salt
Recipe
- 1 cut tomatoes in half and gently squeeze, scooping out pulp and seeds. dice.
- 2 mince green onions and chop cilantro medium fine.
- 3 add onions, basil, cilantro, vinegar, oil and garlic powder to tomatoes and toss. add salt and pepper to taste.
- 4 store in fridge until ready to use.
- 5 serve with 2 scoops low fat cottage cheese and gently mix.
