Tomato Salad Served With Cottage Cheese

Ingredients

  • Servings: 2
  • 4 -5 medium ripe tomatoes
  • 3 green onions, and green parts
  • 1/4 cup cilantro, chopped
  • 1 tablespoon fresh basil or 1 tablespoon freeze- dried basil
  • 1 tablespoon oil (olive or grapeseed)
  • 1 1/2 teaspoons balsamic vinegar
  • 1/4 teaspoon garlic powder (i find fresh garlic a little too strong in this mix)
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon kosher salt

Recipe

  • 1 cut tomatoes in half and gently squeeze, scooping out pulp and seeds. dice.
  • 2 mince green onions and chop cilantro medium fine.
  • 3 add onions, basil, cilantro, vinegar, oil and garlic powder to tomatoes and toss. add salt and pepper to taste.
  • 4 store in fridge until ready to use.
  • 5 serve with 2 scoops low fat cottage cheese and gently mix.
