Spinach Au Roquefort

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 (10 ounce) packages frozen chopped spinach, thawed
  • 1/4 cup butter
  • 1 garlic clove, minced
  • 1/4 cup flour
  • 1/2 pint heavy cream
  • 1/4 cup firmly-packed roquefort cheese
  • salt & pepper

Recipe

  • 1 squeeze spinach dry.
  • 2 in saucepan melt butter; saute garlic but do not burn.
  • 3 stir in flour and cook for a minute or two.
  • 4 gradually stir in cream.
  • 5 add roquefort and stir over low heat until sauce thickens and bubbles.
  • 6 stir in spinach and salt and pepper to taste.
  • 7 simmer till bubbly and heated through.
