Spaghetti Squash Casserole

Ingredients

- 1 spaghetti squash
- 1 cup small curd cottage cheese
- 1/2 cup parmesan cheese, fresh grated
- 1 (10 ounce) box frozen chopped spinach
- 2 eggs
- 2 cups marinara sauce
Recipe
- 1 preheat the oven to 350 degrees. cut the squash in half length-wise and scoop out the seeds.
- 2 put the squash in a 9x13 casserole dish face down so the peel is facing up. bake for 1 hour and then cool.
- 3 defrost the spinach and squeeze out any water.
- 4 use a fork the scrape out the squash flesh in strings so that it looks like spaghetti. put all of the "spaghetti" in a mixing bowl and add the cottage cheese, parmesan cheese, spinach and eggs and mix together.
- 5 pour the mixture into the same 9x13 pan. you don't even need to wash it!
- 6 spread the marinara on top and bake uncovered for 45 minutes at 350 degrees.
