Stuffed Zucchini

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 medium zucchini
  • 1 lb sausage
  • 2 (4 ounce) cans mushrooms
  • 2 cups spaghetti sauce
  • 2 cups shredded mozzarella cheese

Recipe

  • 1 preheat oven to 375.
  • 2 cut off end of zucchini and slice in half lengthwise.
  • 3 scoop out pulp to leave 1/8" shell. put pulp in mixing bowl and chop up well.
  • 4 cook sausage and drain well.
  • 5 mix zucchini pulp, mushrooms, and sausage.
  • 6 scoop mixture into zucchini shells.
  • 7 pour sauce over top.
  • 8 place in baking dish. cover with tinfoil. make sure tinfoil is tight on pan. if it isn't this will take a long time!
  • 9 bake in oven 45 minutes.
  • 10 remove from oven, remove tinfoil and sprinkle with cheese.
  • 11 bake uncovered 5 minutes or until cheese is melty and bubbly.
