Spinach Artichoke Dip

Ingredients

  • Servings: 6
  • 12 ounces artichoke hearts (1 jar)
  • 2 cups spinach
  • 1/4 cup parmesan cheese, grated
  • 1 cup ricotta cheese
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper

Recipe

  • 1 wilt spinach in a microwave oven on high heat for about a minute.
  • 2 drain artichoke hearts and mix with wilted spinach and remaining ingredients in a food processor.
  • 3 puree mixture to a smooth dip.
  • 4 eat with celery boats, steamed asparagus, green beans or broccoli florets.
