Spinach Artichoke Dip

Ingredients

- 12 ounces artichoke hearts (1 jar)
- 2 cups spinach
- 1/4 cup parmesan cheese, grated
- 1 cup ricotta cheese
- 1 tablespoon fresh lemon juice
- 2 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
Recipe
- 1 wilt spinach in a microwave oven on high heat for about a minute.
- 2 drain artichoke hearts and mix with wilted spinach and remaining ingredients in a food processor.
- 3 puree mixture to a smooth dip.
- 4 eat with celery boats, steamed asparagus, green beans or broccoli florets.
