Green Chilies Queso

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 10
  • 1 cup onion, chopped
  • 2 tablespoons margarine
  • 12 -16 ounces green chilies, chopped
  • 1 (28 ounce) can tomatoes, drained and chopped
  • 2 lbs american cheese, kraft deluxe grated (do not substitute)

Recipe

  • 1 variation: increase margarine to 1 stick. substitute 1 can rotel tomatoes with chilies for tomatoes (10 ounce)
  • 2 in a heavy pot, saute onion in margarine until onions become transparent.
  • 3 add green chilies and liquid. saute 2 to 3 minutes longer, careful to not brown.
  • 4 add tomatoes and grated cheese. heat over low heat until melted.
  • 5 cool slowly, stirring often to prevent film from forming. if you freeze, this will not happen when reheating.
  • 6 serve warm with tortilla-style chips.
