Tomato, Goat's Cheese And Olive Gratin

Ingredients

- 1 1/2 cups tomato sauce (i use rich tomato compote rich tomato compote)
- 2 teaspoons dried thyme
- 4 medium tomatoes
- 2 (100 g) packages soft rindless goat cheese
- 16 pitted black olives
Recipe
- 1 heat the oven to 180*c.
- 2 (350*f).
- 3 spread two thirds of the tomato compote over the base of an 9 by 8 inch baking dish.
- 4 sprinkle over 1 tsp of the thyme.
- 5 slice the tomatoes and goats cheese, then arrange in rows on top of the compote.
- 6 scatter over the remaining thyme and the olives.
- 7 spoon over the remaining compote.
- 8 bake for 10 minutes, then pop the gratin under a hot grill until golden.
