Turtle Shell Salad

Ingredients

  • Servings: 6
  • 4 avocados, halved, pitted, peeled
  • 1/2 cup lemon juice
  • 6 large romaine lettuce leaves
  • 3/4 cup cottage cheese
  • 1/4 cup chopped pimento-stuffed green olives
  • 2 green onions, thinly sliced
  • 1 tablespoon picante sauce
  • 1/4 teaspoon salt or 1/4 teaspoon salt substitute
  • 1/4 teaspoon cayenne pepper (optional)

Recipe

  • 1 pour lemon juice in flat bottom dish and roll each avocado half in lemon juice. place flat side down in dish. sprinkle salt on the top of each half.
