Migas Tacos

Ingredients

- 1/3 cup whole wheat tortilla chip, lightly crushed
- 1/4 cup onion, chopped
- 1/4 cup tomato, chopped
- 2 tablespoons jalapeno peppers, chopped
- 1 teaspoon olive oil
- 1/4 cup bacon bits
- 1/2 cup egg substitute
- salt and pepper
- 2 whole wheat tortillas, 8 in
- 1/2 cup 2% cheddar cheese
Recipe
- 1 heat oil in 8 " skillet.
- 2 saute torilla chips, onion, tomato, and pepper 3 to 4 mins till veggies are tender. add bacon bits and stir.
- 3 add in egg substitute and cook till edges are set. carefully lift up edges to let the uncooked egg go underneath.
- 4 once egg is set spoon 1/2 of mixture over each tortilla and top with 1/2 of the cheese. roll up in your favorite fashion and enjoy.
