Stuffed Cremini Mushroom Caps

Ingredients

- 10 large cremini mushrooms
- 1 tablespoon olive oil
- 1/4 cup finely diced onion
- 1/4 cup finely diced bacon
- 1/3 cup roasted corn
- 2 tablespoons finely grated parmesan cheese
- 1 tablespoon fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 separate the mushroom stems from the caps. finely chop stems.
- 2 in large skillet, heat oil. add onion, bacon and mushroom stems and cook, stirring, about 5 minutes. transfer to a bowl and add corn, parmesan, thyme, salt and pepper and mix thoroughly.
- 3 stuff onion mixture into mushroom caps, and place on a baking sheet. bake at 400 for about 15 minutes.
