Stuffed Cremini Mushroom Caps

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 10 large cremini mushrooms
  • 1 tablespoon olive oil
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced bacon
  • 1/3 cup roasted corn
  • 2 tablespoons finely grated parmesan cheese
  • 1 tablespoon fresh thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 separate the mushroom stems from the caps. finely chop stems.
  • 2 in large skillet, heat oil. add onion, bacon and mushroom stems and cook, stirring, about 5 minutes. transfer to a bowl and add corn, parmesan, thyme, salt and pepper and mix thoroughly.
  • 3 stuff onion mixture into mushroom caps, and place on a baking sheet. bake at 400 for about 15 minutes.
