Tortellini With Mushroom And Garlic Sauce

Ingredients
- 18 ounces cheese tortellini
- 2 tablespoons olive oil
- 1 lb mixed mushrooms, sliced
- 1 teaspoon garlic, minced
- 10 ounces peas, slightly defrosted (preferably in butter sauce)
- 7 ounces roasted red peppers, diced
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup parmesan cheese
Recipe
- 1 cook tortellini according to package directions, drain and set aside.
- 2 saute mushrooms and garlic in oil until tender: 5-6 minutes.
- 3 add peas, roasted peppers, salt and pepper. cook until heated throiugh: 2-3 minutes.
- 4 serve over hot tortellini.
- 5 garnish with parmesan cheese.
