Twice Baked

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 (10 ounce) package frozen cauliflower
  • 2 tablespoons fat-free half-and-half
  • 1 tablespoon margarine
  • 1 tablespoon shredded cheddar cheese
  • 1 teaspoon bacon bits
  • chives
  • salt and pepper

Recipe

  • 1 nuke cauliflower to death 4 minutes--stir 5 more minutes.
  • 2 transfer cooked cauliflower to work bowl of food processor.
  • 3 add half and half and margarine and pulse until you get a mashed potato consistency.
  • 4 season with salt and pepper.
  • 5 transfer mixture to a pie plate.
  • 6 sprinkle with cheese, bacon, and chives.
  • 7 bake at 350°f for about 10-15 minutes.
