Mushrooms Stuffed With Spinach, Quinoa And Blue Cheese

Ingredients

- 2 teaspoons olive oil
- 1 lb large cremini mushroom, stems removed and chopped
- 1 cup chopped onion
- salt and pepper
- 3/4 cup cooked quinoa, cooled
- 10 ounces frozen spinach, thawed drained and chopped
- 3 ounces blue cheese, crumbled
- 1/4 teaspoon ground nutmeg
Recipe
- 1 in large skillet, cook mushroom stems, onions, salt and pepper until vegetables are softened. transfer to a bowl and let cool.
- 2 to the onions, add quinoa, spinach, cheese and nutmeg, stirring until combined.
- 3 arrange mushroom caps in a single layer. divide spinach mixture among mushrooms.
- 4 bake at 350 for 18-22 minutes. let cool 5 minutes before serving.
