Mushrooms Stuffed With Spinach, Quinoa And Blue Cheese

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 20
  • 2 teaspoons olive oil
  • 1 lb large cremini mushroom, stems removed and chopped
  • 1 cup chopped onion
  • salt and pepper
  • 3/4 cup cooked quinoa, cooled
  • 10 ounces frozen spinach, thawed drained and chopped
  • 3 ounces blue cheese, crumbled
  • 1/4 teaspoon ground nutmeg

Recipe

  • 1 in large skillet, cook mushroom stems, onions, salt and pepper until vegetables are softened. transfer to a bowl and let cool.
  • 2 to the onions, add quinoa, spinach, cheese and nutmeg, stirring until combined.
  • 3 arrange mushroom caps in a single layer. divide spinach mixture among mushrooms.
  • 4 bake at 350 for 18-22 minutes. let cool 5 minutes before serving.
