Quesadillas

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 7 ounces mexican blend cheese
  • 1 chile, fresno (optional)
  • 8 flour tortillas, 6-inch across
  • onion relish or salsa, to serve

Recipe

  • 1 cut off the stem and deseed the chile,cut the flesh into 8 thin strips.
  • 2 warm a large frying pan or griddle.place one tortilla on the pan or griddle at a time,sprinkle cheese on one half and add a strip of chile,fold the tortilla over the cheese and press the edges together gently to seal,cook the filled tortilla for 1 min,then turn over and cook the other side for 1 minute.
  • 3 remove from the pan,cut it into 3 triangles or 4 strips,serve immediately with onion relish or tomato salsa.
