Tomato And Basil Chevre Spread

Ingredients
- 1/3 cup sun-dried tomato (not oil-packed)
- boiling water
- 4 ounces soft fresh goat cheese (chevre)
- 4 ounces neufchatel cheese, softened
- 1/4 cup fresh basil, finely chopped (or 2 teaspoons dried basil, crushed)
- 3 garlic cloves, peeled and minced
- 1/8 teaspoon ground black pepper
- 2 -3 tablespoons milk
Recipe
- 1 in a small bowl, cover tomatoes with boiling water. let stand 10 minutes. drain and discard liquid. finely chop tomatoes.
- 2 in a medium bowl, stir together tomatoes, cheeses, basil, garlic and pepper. stir in enough milk to reach a spreading consistency.
- 3 cover and chill for at least 2 hours (up to 8 hours).
- 4 serve with assorted crackers.
