Ingredients

- 3 1/2 ounces butter
- 8 ounces stilton cheese
- 4 tablespoons flat leaf parsley, chopped
- 3 garlic cloves, crushed
- coarse sea salt
- fresh ground black pepper
Recipe
- 1 mash the butter, stilton, parsley and garlic together with a fork until well combined; season to taste.
- 2 spoon the butter on to a small square of parchment paper and roll into a cylinder about 1 1/2in thick. twist the ends to secure. chill for at least 1 hour to firm up before using, or freeze.
