Frozen Strawberry Daiquiri Pie

Ingredients

  • Servings: 8
  • 1 (9 inch) graham cracker pie crust, baked
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 (14 ounce) can sweetened condensed milk
  • 2/3 cup frozen strawberry daiquiri concentrate, thawed
  • 2 tablespoons light rum
  • 1 -2 drop red food coloring (optional)
  • 1 cup whipped topping, thawed according to package directions

Recipe

  • 1 the pie crust should be cooled at least 30 minutes before ready to use.
  • 2 beat the cream cheese when an electric mixer on medium speed until fluffy.
  • 3 gradually pour in the milk and continue beating until smooth.
  • 4 stir in the daiquiri mix and rum, and the food coloring if you are using.
  • 5 fold in the whipped topping.
  • 6 pour the filling into the crust and freeze for at least 6 hours, or preferably overnight.
