Squash Casserole

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 lbs yellow squash (cut into chunks)
  • 1/4 cup butter
  • 1/2 cup onion (chopped)
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 cup cheddar cheese (grated)

Recipe

  • 1 in a saucpan over medium heat cook squash with butter, onion and sugar until tender(do not add water, it will create enough to cook).
  • 2 if excessive water in squash drain it off; let cool.
  • 3 when cooled, add egg/milk mixture and salt and pepper to taste.
  • 4 place squash mixture in at 8x8 or similar casserole dish.
  • 5 cover with cheese and bake at 375 degrees for 45 minutes to 1 hour.
