Squash Casserole

Ingredients
- Servings: 6
- 2 lbs yellow squash (cut into chunks)
- 1/4 cup butter
- 1/2 cup onion (chopped)
- 1/4 cup granulated sugar
- 2 eggs
- 1/2 cup milk
- 1 cup cheddar cheese (grated)
Recipe
- 1 in a saucpan over medium heat cook squash with butter, onion and sugar until tender(do not add water, it will create enough to cook).
- 2 if excessive water in squash drain it off; let cool.
- 3 when cooled, add egg/milk mixture and salt and pepper to taste.
- 4 place squash mixture in at 8x8 or similar casserole dish.
- 5 cover with cheese and bake at 375 degrees for 45 minutes to 1 hour.
