Italian Deviled Eggs

Ingredients

  • Servings: 4
  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1/2 teaspoon dijon mustard
  • 1 1/2 teaspoons prepared pesto sauce
  • 1 tablespoon parmesan cheese, grated
  • 1/2 teaspoon lemon juice
  • salt & pepper
  • parsley, chopped

Recipe

  • 1 peel and halve eggs.
  • 2 remove yolks to a small bowl and mash with a fork.
  • 3 add mayonnaise and mustard, blending until smooth.
  • 4 stir in pesto, cheese and lemon juice. season with salt and pepper.
  • 5 spoon into egg shells and garnish with parsley.
  • 6 refrigerate to meld flavors.
