Low Carb Veggie Quesadilla

Ingredients

- 1 (6 inch) low-carb tortillas
- 1/4 cup sharp cheddar cheese, shredded (any flavor)
- 1/2 tablespoon tomato, diced
- 1/2 tablespoon onion, diced
- 1/2 tablespoon bell pepper, diced
- 1/2 tablespoon mushroom, diced (optional)
- 1 tablespoon taco sauce
- cooking spray
Recipe
- 1 lightly spray a small frying pan with cooking spray.
- 2 cook the diced vegetables in the pan for about 3 minutes. remove from the heat & add the taco sauce.
- 3 lightly spray another small frying pan with cooking spray.
- 4 place the tortilla shell into the pan. put a thin layer of cheese on half of the tortilla.
- 5 scatter the vegetable mixture over top of the cheese. add another thin layer of cheese then fold over the tortilla.
- 6 cook on both sides until slightly brown. cut into half & serve hot.
