Tomatoes Stuffed With Mushrooms And Cheese

Ingredients

- 4 large tomatoes
- cooking spray
- 1 lb mushroom, chopped
- 1/2 cup chopped onion
- 1/2 small green bell pepper, chopped
- 3 garlic cloves, crushed
- 1/4 cup chopped parsley
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 cup grated parmesan cheese
Recipe
- 1 slice top off each tomato. scoop out pulp and reserve.
- 2 spray skillet with cooking spray. sauté vegetables and garlic until tender, about 10 minutes.
- 3 stir in reserved tomato pulp, herbs and cayenne; cook 5 minutes longer.
- 4 place tomatoes on a baking dish; fill with vegetable mixture. sprinkle with cheese and bake at 350 for 10 minutes or until hot.
