Tomatoes Stuffed With Mushrooms And Cheese

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 large tomatoes
  • cooking spray
  • 1 lb mushroom, chopped
  • 1/2 cup chopped onion
  • 1/2 small green bell pepper, chopped
  • 3 garlic cloves, crushed
  • 1/4 cup chopped parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 slice top off each tomato. scoop out pulp and reserve.
  • 2 spray skillet with cooking spray. sauté vegetables and garlic until tender, about 10 minutes.
  • 3 stir in reserved tomato pulp, herbs and cayenne; cook 5 minutes longer.
  • 4 place tomatoes on a baking dish; fill with vegetable mixture. sprinkle with cheese and bake at 350 for 10 minutes or until hot.
