Lucas Eggs

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 18 eggs
  • 1 bunch fresh asparagus
  • 1 chopped onion
  • 1 chopped green pepper
  • 1 (10 ounce) can tomatoes and green chilies
  • 2 cups of grated cheddar cheese
  • 1 tablespoon olive oil
  • salsa

Recipe

  • 1 chop onion and pepper.
  • 2 saute in olive oil in large frying pan with lid.
  • 3 add chopped asparagus tips only.
  • 4 cook till almost tender (a few minutes).
  • 5 drain tomatoes with chiles and add to frying pan.
  • 6 break and drop eggs over mixture trying not to break the yokes.
  • 7 add 2 oz of water if not moist.
  • 8 cover and cook over low heat until the eggs are done.
  • 9 uncover, add cheese, turn off heat, cover and let stand until the cheese is melted, 10-15 minutes.
