Lucas Eggs

Ingredients

- 18 eggs
- 1 bunch fresh asparagus
- 1 chopped onion
- 1 chopped green pepper
- 1 (10 ounce) can tomatoes and green chilies
- 2 cups of grated cheddar cheese
- 1 tablespoon olive oil

Recipe
- 1 chop onion and pepper.
- 2 saute in olive oil in large frying pan with lid.
- 3 add chopped asparagus tips only.
- 4 cook till almost tender (a few minutes).
- 5 drain tomatoes with chiles and add to frying pan.
- 6 break and drop eggs over mixture trying not to break the yokes.
- 7 add 2 oz of water if not moist.
- 8 cover and cook over low heat until the eggs are done.
- 9 uncover, add cheese, turn off heat, cover and let stand until the cheese is melted, 10-15 minutes.
