Sb - Hot Scrambled Tofu

Ingredients

  • Servings: 4
  • 20 ounces silken tofu
  • 2 tablespoons extra virgin olive oil
  • 4 green onions
  • 1/4 tablespoon ground turmeric
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon hot pepper sauce
  • 1/2 cup low-fat jalapeno monterey jack cheese
  • 1/4 teaspoon paprika

Recipe

  • 1 prep: green onions - use the part only and mince, pepper jack cheese - grated.
  • 2 cover a large backing sheet with paper towels. place the tofu on the towels in a single layer. cover the tofu with paper towels and pat down until dry. discard the paper towels and crumble the tofu.
  • 3 heat the evoo in a large skillet over medium-high heat. add the green onions and cook, stirring frequently, for 3 minutes, or until soft.
  • 4 stir in the tofu and turmeric.
  • 5 add salt, pepper, and hot pepper sauce to taste.
  • 6 cook for 2 minutes, or until the tofu is firm.
  • 7 evenly divide among 4 plates. sprinkle with cheese and paprika.
