Ingredients

- 20 ounces silken tofu
- 2 tablespoons extra virgin olive oil
- 4 green onions
- 1/4 tablespoon ground turmeric
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon hot pepper sauce
- 1/2 cup low-fat jalapeno monterey jack cheese
- 1/4 teaspoon paprika
Recipe
- 1 prep: green onions - use the part only and mince, pepper jack cheese - grated.
- 2 cover a large backing sheet with paper towels. place the tofu on the towels in a single layer. cover the tofu with paper towels and pat down until dry. discard the paper towels and crumble the tofu.
- 3 heat the evoo in a large skillet over medium-high heat. add the green onions and cook, stirring frequently, for 3 minutes, or until soft.
- 4 stir in the tofu and turmeric.
- 5 add salt, pepper, and hot pepper sauce to taste.
- 6 cook for 2 minutes, or until the tofu is firm.
- 7 evenly divide among 4 plates. sprinkle with cheese and paprika.
