Spinach Waffles

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 450 g frozen spinach, thawed
  • 1 onion
  • 1 tablespoon olive oil
  • 70 g butter
  • 100 g grated cheese (your favourite kind)
  • 4 eggs
  • 100 ml milk
  • 200 g flour
  • 1/2 teaspoon baking powder

Recipe

  • 1 cut the onion into small pieces. saute in olive oil until soft. then add the spinach. season generously with salt and pepper (the spinach absorbs a lot of flavour). cook until the spinach is done.
  • 2 in a big bowl combine butter, cheese, eggs, milk, flour and baking powder. carefully fold in the spinach and onion.
  • 3 bake portions of the dough in a well heated and lightly greased waffle iron until crisp and golden brown.
  • 4 serve with garlic yogurt or topping of your choice.
