Spinach Waffles

Ingredients
- 450 g frozen spinach, thawed
- 1 onion
- 1 tablespoon olive oil
- 70 g butter
- 100 g grated cheese (your favourite kind)
- 4 eggs
- 100 ml milk
- 200 g flour
- 1/2 teaspoon baking powder
Recipe
- 1 cut the onion into small pieces. saute in olive oil until soft. then add the spinach. season generously with salt and pepper (the spinach absorbs a lot of flavour). cook until the spinach is done.
- 2 in a big bowl combine butter, cheese, eggs, milk, flour and baking powder. carefully fold in the spinach and onion.
- 3 bake portions of the dough in a well heated and lightly greased waffle iron until crisp and golden brown.
- 4 serve with garlic yogurt or topping of your choice.
