Heirloom Tomatoes With Burrata

Ingredients

  • Servings: 4
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil (extra virgin)
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 teaspoon sea salt
  • 4 cups arugula, loosely packed
  • 2 lbs heirloom tomatoes, cut into 1/4-inch-thick slices
  • 1/4 teaspoon black pepper, freshly ground
  • 1/8 teaspoon sea salt
  • 1 lb burrata cheese, quartered (or fresh mozzarella cheese)
  • 1/4 cup fresh basil leaf

Recipe

  • 1 whisk together first 4 ingredients to make vinaigrette.
  • 2 arrange arugula on 4 plates.
  • 3 top with tomatoes; sprinkle with 1/4 teaspoon pepper and 1/8 teaspoon salt.
  • 4 top with cheese.
  • 5 drizzle with vinaigrette, and sprinkle with basil.
