Heirloom Tomatoes With Burrata

Ingredients

- 1/2 cup balsamic vinegar
- 1/2 cup olive oil (extra virgin)
- 1/2 teaspoon black pepper, freshly ground
- 1/4 teaspoon sea salt
- 4 cups arugula, loosely packed
- 2 lbs heirloom tomatoes, cut into 1/4-inch-thick slices
- 1/4 teaspoon black pepper, freshly ground
- 1/8 teaspoon sea salt
- 1 lb burrata cheese, quartered (or fresh mozzarella cheese)
- 1/4 cup fresh basil leaf
Recipe
- 1 whisk together first 4 ingredients to make vinaigrette.
- 2 arrange arugula on 4 plates.
- 3 top with tomatoes; sprinkle with 1/4 teaspoon pepper and 1/8 teaspoon salt.
- 4 top with cheese.
- 5 drizzle with vinaigrette, and sprinkle with basil.
