Quiche Lorraine

Ingredients
- 1 (9 inch) unbaked pie shells
- 1/2 lb bacon
- 1 1/2 cups swiss cheese (6 oz)
- 3 eggs
- 1 1/2 cups light cream
- 3/4 teaspoon salt
- 1 dash nutmeg
- 1 dash cayenne
- 1 dash pepper
Recipe
- 1 prepare pie shell, refrigerate until ready to use.
- 2 preheat the oven to 375 degrees.
- 3 fry bacon until crisp;drain on paper towels.
- 4 crumble bacon into bits and sprinle over bottom of prepared pie shell. sprinkle with grated swiss cheese.
- 5 in medium bowl, with rotary beater, beat eggs with light cream, salt, nutmeg, cayenne, and pepper until well combined but not frothy.
- 6 pur mixture into pie shell.
- 7 bake for 35 to 40 minutes, or until the top is golden and the center seems form when gently shaken.
- 8 let quiche lorraine cool on a wire rack for 10 minutes before serving.
