Grated Broccoli With Parmesan

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 6 cups grated broccoli stems, from 2 bunches broccoli
  • 2 ounces parmesan cheese, about 2/3 cup shredded
  • 3 tablespoons olive oil
  • salt
  • 1/8 teaspoon red pepper flakes

Recipe

  • 1 peel and grate the broccoli stems.
  • 2 shred the cheese.
  • 3 heat the oil in a large frying pan over medium heat.
  • 4 add the grated broccoli stems and 3/4 tsp salt and toss to coat.
  • 5 cover, reduce heat and cook, stirring occasionally, until tender, about 10-15 minutes.
  • 6 stir in the red-pepper flakes and cook 1 minute.
  • 7 stir in the parmesan and serve.
