Grated Broccoli With Parmesan

Ingredients

- 6 cups grated broccoli stems, from 2 bunches broccoli
- 2 ounces parmesan cheese, about 2/3 cup shredded
- 3 tablespoons olive oil
- salt
- 1/8 teaspoon red pepper flakes
Recipe
- 1 peel and grate the broccoli stems.
- 2 shred the cheese.
- 3 heat the oil in a large frying pan over medium heat.
- 4 add the grated broccoli stems and 3/4 tsp salt and toss to coat.
- 5 cover, reduce heat and cook, stirring occasionally, until tender, about 10-15 minutes.
- 6 stir in the red-pepper flakes and cook 1 minute.
- 7 stir in the parmesan and serve.
