Homemade Cloverleaf Honey

Ingredients
- 60 clover blossoms
- 40 red clover blossoms
- 3 rose petals (wild)
- 5 lbs sugar
- 3 cups water
- 1 teaspoon powdered alum
Recipe
- 1 use fresh blossoms; remove all green stems.
- 2 wash clover and rose petals throughly in cool running water;
- 3 drain well.
- 4 pat dry.
- 5 place in large metal bowl and set aside.
- 6 in large heavy saucepan bring sugar, water and alum to a boil; stirring constantly.
- 7 boil without stirring until candy thermorther.

- 9 remove from heat.
- 10 pour the above over clover and wild rose petals.
- 11 let stand 45 minutes.
- 12 pour through double thickness of cheesecloth;.
- 13 discard clovers and petals.
- 14 pour honey in jars.
- 15 store in fridge.
