Spinach Tomato Salad

Ingredients

  • Servings: 2
  • 1 tablespoon mayonnaise
  • 2 teaspoons vegetable oil
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon sugar
  • salt, to taste
  • pepper, to taste
  • 1/2 small garlic clove
  • 1/4 lb baby spinach
  • 1/4 cup fresh mushrooms, sliced
  • 6 grape tomatoes
  • 1 hard-boiled egg
  • parmesan cheese

Recipe

  • 1 mix the dressing ingredients together.
  • 2 put the spinach and mushrooms in a bowl.
  • 3 toss with dressing and put on plates.
  • 4 top with sliced or chopped boiled egg, tomatoes and fresh grated parmesan cheese.
  • 5 variation:.
  • 6 mix boston or bibb lettuce with the spinach, saute the mushrooms (cool), and use oil packed, drained and sliced sundried tomatoes instead of grape tomatoes.
