Triple Cheese Omelet

Ingredients

- 3 tablespoons cottage cheese with chives
- 2 tablespoons grated sharp cheddar cheese
- 1 tablespoon grated parmesan cheese
- 3 large eggs
- 1 tablespoon water
- salt, to taste
- pepper, to taste
- 1 teaspoon butter or 1 teaspoon margarine
Recipe
- 1 in a small bowl, mix together the cheeses; set aside.
- 2 in a bowl, whisk the eggs, water, salt, and pepper.
- 3 heat an 8-inch nonstick skillet (or omelet pan) over medium heat.
- 4 add butter to skillet; swirl pan to coat the bottom of pan.
- 5 when butter foams, pour in egg mixture all at once.
- 6 let set until edges start to cook; with a spatula, gently lift edges of mixture and tilt skillet to allow uncooked egg mixture to flow underneath.
- 7 continue to do this until the top is almost dry.
- 8 spoon filling over one half of the omelet.
- 9 fold the other side over to cover.
- 10 let stand a few seconds to the cheese can melt.
- 11 transfer to a warmed plate and serve immediately.
