Raspberry Mint Cooler

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 12
  • 3 cups water
  • 1 -1 1/2 cup chopped fresh mint
  • 3/4 cup sugar
  • 3 (10 ounce) packages frozen sweetened raspberries, thawed
  • 2 1/4 cups lemonade concentrate
  • 6 cups cold water
  • crushed ice

Recipe

  • 1 in a large saucepan, bring water, mint and sugar to a boil.
  • 2 stir until sugar is dissolved.
  • 3 remove from the heat; let stand for 5 minutes.
  • 4 add the raspberries and the lemonade concentrate; gently mash raspberries.
  • 5 line a strainer with four layers of cheesecloth; place over a 1-gal. container.
  • 6 slowly pour raspberry mixture into strainer' and discard pulp and mint.
  • 7 add cold water to the raspberry juice; stir well.
  • 8 serve over ice.
