Squash Casserole

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 5 medium yellow squash, small cubes
  • 8 pieces bacon, cooked
  • 2 tablespoons butter, melted
  • 1 tablespoon milk
  • 1 1/2 cups cheddar cheese, shredded
  • 24 ritz crackers, crushed
  • black pepper

Recipe

  • 1 cook squash in salted water until tender and then drain.
  • 2 crumble bacon and stir into squash. add butter, milk and pepper.
  • 3 lightly fold in cheese and crushed crackers.
  • 4 pour mixture into oil sprayed 2 quart casserole dish. top with more cheese and a few buttered cracker crumbs. bake at 350 degrees for 25 minutes or until bubbly.
