Ingredients
- 3 eggs
- 1/2 cup low fat cottage cheese
- 2 ounces havarti cheese, grated
- 2 green onions, sliced
- 10 ounces frozen chopped spinach, thawed and drained
Recipe
- 1 whip eggs with a fork until just mixed.
- 2 add green onion, cottage cheese and havarti, mix well.
- 3 add spinach and stir to break up chunks, mixing thoroughly and distributing throughout.
- 4 bake at 400° for 20 minutes and let cool.
