Southwest Sausage Bake

Ingredients

- 6 flour tortillas, cut in 1/2 inch strips (10 inch)
- 4 (4 ounce) cans chopped green chilies, drained
- 1 lb bulk lamb sausage, cooked, drained
- 2 cups shredded monterey jack cheese
- 10 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ground cumin
- paprika
- 2 medium tomatoes, sliced
- sour cream
- salsa
Recipe
- 1 grease 13x9x2 baking dish, layer half of the tortilla strips, chiles, sausage and cheese. repeat.
- 2 beat eggs, milk and seasonings in a bowl and pour over cheese.
- 3 sprinkle with paprika.
- 4 cover and refrigerate overnight.
- 5 remove from refrigerator 30 minutes before baking. bake, uncovered, for 50 minutes at 350.
- 6 arrange tomato slices on top. bake 10-15 minutes longer until knife inserted in center comes out clean.
- 7 let stand 10 minutes before cutting.
- 8 serve with sour cream and salsa.
