Southwestern Pimento Cheese

Ingredients

  • Servings: 16
  • 16 ounces shredded sharp cheddar cheese (not the fancy or finely shredded)
  • 2 tablespoons chopped red onions
  • 3 tablespoons chopped fresh cilantro
  • 1/2 teaspoon cumin
  • 1 -2 teaspoon chili powder (mild or hot to taste)
  • 1 tablespoon chopped fresh jalapeno
  • 4 ounces pimientos, drained
  • 1/2 cup mayonnaise (hellman's)
  • salt and pepper (optional)

Recipe

  • 1 combine first 7 ingredients. stir in mayo until combined. taste and add salt / pepper if necessary. i find the cheese and spices usually do not need additional salt.
  • 2 if you can find it, use chipotle chile powder - it give the dip a wonderful smoky taste.
