Southwestern Pimento Cheese

Ingredients
- Servings: 16
- 16 ounces shredded sharp cheddar cheese (not the fancy or finely shredded)
- 2 tablespoons chopped red onions
- 3 tablespoons chopped fresh cilantro
- 1/2 teaspoon cumin
- 1 -2 teaspoon chili powder (mild or hot to taste)
- 1 tablespoon chopped fresh jalapeno
- 4 ounces pimientos, drained
- 1/2 cup mayonnaise (hellman's)
- salt and pepper (optional)
Recipe
- 1 combine first 7 ingredients. stir in mayo until combined. taste and add salt / pepper if necessary. i find the cheese and spices usually do not need additional salt.
- 2 if you can find it, use chipotle chile powder - it give the dip a wonderful smoky taste.
