Low Carb Amish Ham Casserole

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 lb ham, cubed
  • 1 onion, chopped (or 6 green onions, sliced into rounds)
  • 6 eggs
  • 1 lb cauliflower, separated into small florets
  • 2 cups cheddar cheese (8 ounces) or 2 cups monterey jack pepper cheese, shredded (8 ounces)
  • 16 ounces cottage cheese, small curd

Recipe

  • 1 combine all ingredients in a large mixing bowl and then transfer to a greased 9 x 13 baking dish.
  • 2 bake, uncovered, at 350 degrees f for 35 to 40 minutes or until the mixture is set and bubly.
  • 3 let stand for 10 minutes before serving.
